Avocado Toast
Our daughter Megan works at Famous Toastery, a breakfast/brunch/lunch restaurant. My favorite thing on the menu is Annie’s Avocado Toast. Oh my! Of course, we had to figure out how to make it at home so that we can eat it more often!
What you need:
Hearty whole grain bread
Ripe avocados (or prepared guacamole)
Fresh salsa
Minced cilantro
Crumbled goat cheese
Directions:
Peel and mash avocados. Mix like guacamole or use the garlic/lemon dressing below. Toast the bread. Spread the avocado mixture over the toast. Add salsa. Sprinkle goat cheese. Sprinkle cilantro. These are the basic instructions. Make it as you like it.
Ingredients for lemon/garlic dressing
- 1 small clove garlic, minced
- 1 tablespoon fresh lemon juice
- 1/2 teaspoon lemon zest (finely grated)
- 1/2 teaspoon fine sea salt
- 1/4 teaspoon black pepper (freshly ground)
- 1/4 teaspoon dry ground mustard
- 2 to 3 tablespoons EEVO or lemon-infused olive oil
Mix well Let sit for 10 minutes for ingredients to fuze. Drizzle on avocados then mix together.
It’s truly that simple! Some days I just mash avocados and some days I go all out and make lemon avocados.
