2 Ingredient Pumpkin Muffins

Do you love pumpkin muffins? Here is a simple way to make muffins with just two ingredients: a cake mix and a can of pumpkin. You don’t need eggs, oil, milk, or butter to make moist low-fat pumpkin muffins. They are super simple to make and incredibly moist and delicious. Fancy them up with mini chocolate chips, raisins, or sprinkle with coarse sugar.

Ingredients

You will need a  can of pumpkin and a box cake mix. You can use any flavor even chocolate. Our favorite is spice or vanilla.

Mix ingredients

Mix the cake mix with the pumpkin until just blended. I use a big fork but you can also use a hand mixer. You can add 1 cup mini chocolate chips, 1 cup raisins, or nuts if you like.

Fill muffin tins with batter

Spray your muffin tin with baking spray. You can use muffin cups/papers. I choose not to because these muffins easily come out of the muffin pan.  Using an ice cream scoop add the batter. The batter will make 12 muffins. Sometimes I sprinkle the tops with mini chips or cane sugar crystals. But they are delicious with no toppings!

Optional strudel topping

  • 1/2 cup brown sugar
  • 1/2 stick butter
  • 1/2 cup flour
  • Mix together, sprinkle on top of muffins, and press.

Bake at 350* for 18-20 minutes

Store in zip bags. These freeze well, too!
